Many grape varieties travel between regions and bring a unique signature to each terroir. Among them, the Vermentino finds its place in the white wines of southern France, where it reveals its full potential. Yet, many are still unaware of the strengths of this grape variety and the richness of its expressions. At Let It Bib, we take you on a journey to discover Vermentino, its origins, its vinification, as well as some pairing suggestions.

The origins of Vermentino

Vermentino has a long history along the Mediterranean. Indeed, it has been cultivated for several centuries in regions such as Italy, Corsica, and southern France. This grape variety enjoys sunny hillsides exposed to the gentle coastal winds. It should be noted
that Vermentino vines thrive well on limestone, clay, or stony soils, typical of the terroirs of Provenceand the Languedoc.

Furthermore, some vineyards benefit from an AOC or PGI label. This enhances the work of the winemakers and the uniqueness of the terroirs. As for the grapes, they reach maturity early and preserve an aciditythat provides balance and freshness. The bunches are compact, rich in juice, and often hand-harvested to maintain excellent quality.

We find this variety in various appellations, always recognized for the purity of its aromas. Vermentino expresses itself just as well on its own as it does in blends with other white grape varieties such as Grenache Blanc or Ugni Blanc.

How do we craft our Vermentino wines at Let It Bib?

At Let It Bib, we offer cuvées made from Vermentino, crafted with respect for nature. We prioritize organic or biodynamic farmingto protect the vines and the terroir. The harvests are usually done by hand, respecting the ripeness of the fruit. The grapes are gently pressed, then fermentation takes place in stainless steel tanks or sometimes in amphorae, without added sulfites.

Some wines benefit from aging on fine lees, which gives them roundness and subtlety. Controlling the
temperatures during vinificationhelps preserve the aromatic palette, the floral and fruity notes of the grape. In addition, vinification may include maceration to extract more flavors, as is the case for our

Bob Singlar blanc maceration. These choices allow us to produce dry, lively, balanced white wines with an expressive bouquet. It must be said that in our collection, every vintage highlights the identity of Vermentino, whether it comes from the Luberon, the Vaucluse, or Provence.Which dishes to pair with Vermentino wine?

Vermentino wine is a safe choice for both simple and refined cuisine. It pairs perfectly with

seafood, oysters, and shellfish, which are loved for their delicate, briny quality. Grilled fish highlight its freshness and grapefruit aromas. For an aperitif, its light acidity stimulates the appetite and its fruitiness remains elegant on the palate. If you are preparing a

Mediterranean salador grilled vegetables, Vermentino beautifully complements the notes of citrus and herbs. With fresh goat cheese, its minerality creates a lovely pairing.
