Converting

The term "in conversion" refers to farms that have begun a transition to organic farming to protect the health of consumers, winemakers, and their families. Organic wine is produced using farming and winemaking methods that exclude the use of synthetic chemicals. Winemakers may use naturally-derived products instead, but only to a limited extent. The conversion period lasts three years, which is the time required to clear the plots of any chemical residues.
