Recognizable by its dark purple color, Malbec (or Côt) is the signature grape variety of the Cahors AOC. It produces red wines that are powerful on the palate, with supple tannins and aromas of plum, black cherry, blackberry, spices, and tobacco. The food and wine pairing approaches the sublime with red meats (prime rib) or spicy dishes (rougail sausage). It is no wonder that Malbec has become a star grape variety in Argentina, in the Andes Mountains.
