Rubis 2024 (Vin de France)
/
#NewArrival #Biodynamic
The Eblin family’s wines never cease to dazzle us. This time, it’s the Pinot Noir’s turn. To the eye, the color is ruby, transparent, and brilliant, hinting at an approach defined by finesse—confirmed from the very first nose (notes of rose) and the first sip.
Great precision, XXL suppleness, a lithe texture, just the right amount of acidity to lengthen the wine without ever hardening it, and a clean, long finish with smoky, spicy notes... And what fruit! Red and fresh, in this case, with notes of morello cherry, raspberry, and redcurrant. It is a total success.
For several years, the weather prevented us from bringing this collaboration with the estate to fruition, as they were losing too many grapes to offer us a Pinot Noir cuvée. The 2024 vintage is the one! Thank you, well done, and cheers to you, the Eblins!

🤗 Our tasting & storage tips
🤗 Our tasting & storage tips
Recommended serving temperatures:
- White and rosé wines: between 7 and 10°C
- Light red wines, orange wines (skin-contact whites), and "blouges" (light red-white blends): around 13°C
- Structured red wines: between 15 and 18°C
It is always better to serve a wine slightly too cool than too warm.
BIB (bag-in-box) wines are very good if you serve them directly from the tap. But "to your surprise," you will find that they always benefit from being decanted or bottled 15 to 30 minutes before tasting.
Before and after opening, it is ideal to store your BIB wine at a constant temperature below 20°C. The closer the storage temperature is to 14°C, the longer the wine will keep.
Once opened, under good storage conditions, the BIB preserves the organoleptic qualities of the wine for at least 4 weeks.
BIB wine, like bottled wine, has no "use by" date or "best before" date.
That said, BIB wine is not intended for cellar aging. We recommend consuming it within 2 months of purchase.
Note: Red and orange wines keep better and longer than white and rosé wines. Thank the tannins for that!
Enjoy your tasting! 🍷🍷
