We all know the black diamond of the Périgord, but are you familiar with its purple diamond? That is, in any case, the nickname given to this gem from l’Astré, a small, exclusive estate beloved by epicureans in search of light, fruity, and smooth wines.
Aude was a wine merchant in the Bordeaux region and Sylvain was an estate manager in the Médoc, but it was in Argentina that they fell in love and the project to take over an organic estate was born. After seven vintages, their passion has grown tenfold, and their estate, perched on a limestone cliff and now managed through polyculture, has established itself as the benchmark of the "Périgord Pourpre" (Purple Périgord)—named for the color the Bergeracois vineyards turn in autumn.
When approaching the Har lo pass cuvée, forget everything you think you know about wines from the Southwest. This is an infusion of Merlot into a direct press of Cabernet Franc, blended with a carbonic maceration of Cabernet Sauvignon, aged for 8 months in stainless steel tanks. A 100% fruit-forward vinification resulting in a wine with very few tannins, which is indulgent and ultra-digestible—a thousand miles away from regional clichés.
The nose might put off those uninitiated to natural wine. But the palate, on the other hand... Tart fresh morello cherry, violet, undergrowth, gunflint... A pure delight when chilled to around 13°C, enjoyed on its own as an aperitif or paired with our Spanish charcuterie, summer salads, tomato tarts, fresh Asian dishes, or wild berry salads...

Recommended serving temperatures:
- White and rosé wines: between 7 and 10°C
- Light red wines, orange wines (skin-contact whites), and "blouges" (light red-white blends): around 13°C
- Structured red wines: between 15 and 18°C
It is always better to serve a wine slightly too cool than too warm.
BIB (bag-in-box) wines are very good if you serve them directly from the tap. But "to your surprise," you will find that they always benefit from being decanted or bottled 15 to 30 minutes before tasting.
Before and after opening, it is ideal to store your BIB wine at a constant temperature below 20°C. The closer the storage temperature is to 14°C, the longer the wine will keep.
Once opened, under good storage conditions, the BIB preserves the organoleptic qualities of the wine for at least 4 weeks.
BIB wine, like bottled wine, has no "use by" date or "best before" date.
That said, BIB wine is not intended for cellar aging. We recommend consuming it within 2 months of purchase.
Note: Red and orange wines keep better and longer than white and rosé wines. Thank the tannins for that!
