We’d been pestering him for years to release his cult-favorite cuvée in a BiB... And it's finally happened! Coming from the legendary vines of Jules Chauvet (who reinvented natural wine with Marcel Lapierre in the 80s), this nectar plays in the big leagues of thirst-quenching Morgons.
Karim is a self-made winemaker of North African descent, raised on Beaujolais tradition, a stickler for doing things right, an eternal chatterbox, a lover of his adopted Morgon, and gifted with a supernatural sense for the good life and authentic things.
Qualities and a spirit that the first-generation heavyweights of the village (P’tit Max, Marcel Lapierre, Jean Foillard...) kindly helped channel until the bird spread its wings in 2006. 20 years later, Karim’s natural Beaujolais wines blossom on the menus of many Michelin-starred restaurants, feature in the best guides, and are exported to Japan, the US, Canada...
Karim is a purveyor of emotion, pleasure, and life! His daughter, Noémie, was raised on these values. For a few years now, the "enfant terrible" of Morgon has also been tenderly passing on his winemaking knowledge to her. And honestly, the father-daughter collaboration exceeds our expectations. It’s elegant, precise, with pep and fruit to spare. Super balanced. We’re melting. In our opinion, the best Beaujolais-Villages around. Thank you from the bottom of our hearts, Vionnets, for this exclusive BiB cuvée.

🤗 Our tasting & storage tips
🤗 Our tasting & storage tips
Recommended serving temperatures:
- White and rosé wines: between 7 and 10°C
- Light red wines, orange wines (skin-contact whites), and "blouges" (light red-white blends): around 13°C
- Structured red wines: between 15 and 18°C
It is always better to serve a wine slightly too cool than too warm.
BIB (bag-in-box) wines are very good if you serve them directly from the tap. But "to your surprise," you will find that they always benefit from being decanted or bottled 15 to 30 minutes before tasting.
Before and after opening, it is ideal to store your BIB wine at a constant temperature below 20°C. The closer the storage temperature is to 14°C, the longer the wine will keep.
Once opened, under good storage conditions, the BIB preserves the organoleptic qualities of the wine for at least 4 weeks.
BIB wine, like bottled wine, has no "use by" date or "best before" date.
That said, BIB wine is not intended for cellar aging. We recommend consuming it within 2 months of purchase.
Note: Red and orange wines keep better and longer than white and rosé wines. Thank the tannins for that!
Enjoy your tasting! 🍷🍷
