The color is raspberry, diaphanous; the juice is light (11%), fruity (Gariguette strawberry, cherry), floral (rose, peony), without excess, lifted by a pinch of white pepper on the finish. Tannins with the discretion of a secret agent. Cinsault Dream is the new gem from Xavier Fenoy, a pure Languedoc Cinsault that is all lace, delicate and fresh, made from the estate's young vines.
His secret to achieving such freshness under the blazing sun of Pézenas? Strict sorting at harvest, meticulous destemming, short one-month maceration without punching down or pumping over to make the fruit explode without extracting too much substance, natural vinification, and aging in stainless steel vats until bottling, giving the wine time to settle.
We had already fallen hard for it in January during our visit to the estate. 6 months of aging later, it exceeds our expectations.

Recommended serving temperatures:
- White and rosé wines: between 7 and 10°C
- Light red wines, orange wines (skin-contact whites), and "blouges" (light red-white blends): around 13°C
- Structured red wines: between 15 and 18°C
It is always better to serve a wine slightly too cool than too warm.
BIB (bag-in-box) wines are very good if you serve them directly from the tap. But "to your surprise," you will find that they always benefit from being decanted or bottled 15 to 30 minutes before tasting.
Before and after opening, it is ideal to store your BIB wine at a constant temperature below 20°C. The closer the storage temperature is to 14°C, the longer the wine will keep.
Once opened, under good storage conditions, the BIB preserves the organoleptic qualities of the wine for at least 4 weeks.
BIB wine, like bottled wine, has no "use by" date or "best before" date.
That said, BIB wine is not intended for cellar aging. We recommend consuming it within 2 months of purchase.
Note: Red and orange wines keep better and longer than white and rosé wines. Thank the tannins for that!
