Tasted blind, we would have happily bet on a Côte-de-Brouilly, a Moulin-à-Vent, or a Chénas—those elegant, deep Beaujolais crus with their spicy notes and ripe black fruit. Dead wrong! It tastes divine, but we’re actually in Saint-Germain-Nuelles, between Villefranche and Lyon, in the heart of the "Pierres Dorées" region at the southern tip of Beaujolais. At Jef Debourg’s, a winemaker who converted to sulfite-free winemaking 10 years ago.
Grapes harvested at full maturity, destemmed, aged 12 months in truncated conical vats, no filtration, zero added sulfites… A serious Gamay with plenty of kick, perfectly mastered. We love it.

Recommended serving temperatures:
- White and rosé wines: between 7 and 10°C
- Light red wines, orange wines (skin-contact whites), and "blouges" (light red-white blends): around 13°C
- Structured red wines: between 15 and 18°C
It is always better to serve a wine slightly too cool than too warm.
BIB (bag-in-box) wines are very good if you serve them directly from the tap. But "to your surprise," you will find that they always benefit from being decanted or bottled 15 to 30 minutes before tasting.
Before and after opening, it is ideal to store your BIB wine at a constant temperature below 20°C. The closer the storage temperature is to 14°C, the longer the wine will keep.
Once opened, under good storage conditions, the BIB preserves the organoleptic qualities of the wine for at least 4 weeks.
BIB wine, like bottled wine, has no "use by" date or "best before" date.
That said, BIB wine is not intended for cellar aging. We recommend consuming it within 2 months of purchase.
Note: Red and orange wines keep better and longer than white and rosé wines. Thank the tannins for that!
