The democratization of good taste, excellence for all, and sharing as a mantra: this is what has driven the Fabre family since... 1605 and for 16 generations! Organic since 1991, and now in the hands of Clémence and Louis-Jacques, this Corbières institution, frequently lauded by Bettane+Desseauve, naturally turned toward high-quality bag-in-box wines very early on. We are thrilled to present our first collaboration: a lovely Chardonnay, bursting with fruit and polished by light oak aging.
Luminous lemon hue, nose of pear, almond, honeysuckle, and a light toast; on the palate, yuzu and grapefruit tease the pear and quince, while fine buttery notes tie it all together and a welcome saline touch stretches and punctuates the finish.
A beautiful tribute to its terroir, straddling the Mediterranean and the Pyrenees. And a choice companion for our aperitifs, shellfish, ceviches, sashimis, briny tartares, mushrooms, roasted poultry, vegetarian dishes, fresh cheeses...
And why Haiku, you might ask, named after those traditional Japanese 17-syllable poems that capture the essence of an emotion linked to nature? Hint: the answer is in the question... and in this box! 😉

Recommended serving temperatures:
- White and rosé wines: between 7 and 10°C
- Light red wines, orange wines (skin-contact whites), and "blouges" (light red-white blends): around 13°C
- Structured red wines: between 15 and 18°C
It is always better to serve a wine slightly too cool than too warm.
BIB (bag-in-box) wines are very good if you serve them directly from the tap. But "to your surprise," you will find that they always benefit from being decanted or bottled 15 to 30 minutes before tasting.
Before and after opening, it is ideal to store your BIB wine at a constant temperature below 20°C. The closer the storage temperature is to 14°C, the longer the wine will keep.
Once opened, under good storage conditions, the BIB preserves the organoleptic qualities of the wine for at least 4 weeks.
BIB wine, like bottled wine, has no "use by" date or "best before" date.
That said, BIB wine is not intended for cellar aging. We recommend consuming it within 2 months of purchase.
Note: Red and orange wines keep better and longer than white and rosé wines. Thank the tannins for that!
