Long live the free South-West! The patron saint of local wines is a free spirit. Free from dictates and specifications, but certainly not from great evenings with friends. I name him: Saint Vincent Alexis, 8th generation of Château Barouillet, or the sorcerer behind these cult vintages for nature lovers: "BergeCrac", "Toutankharbo" or "Splash!", the estate's bubbles.
Muscadelle, Ondenc, Chenin, Sémillon, Sauvignon Blanc and Gris... In this little paradise in the Périgord, we plant together, harvest together, sort together, barrel together, toast together—we do everything together, with good old-fashioned elbow grease.
"Our approach tends toward a return to peasant farming, with an appreciation for each terroir and each plot—a return to peasant common sense. We take the organic approach a little further by working according to the lunar and biodynamic calendar."
In this kaleidoscope, connoisseurs might recognize BergeCrac white. They wouldn't be wrong... It's extra fresh, extra fluid, extra fine; floral and fruity, with notes of honeysuckle, verbena, white fruits, and citrus. It's crisp, it's smooth, it's vibrant, it's zesty, it's thirst-quenching. A must-have from apéro time until the end of the night, pairing perfectly with our ceviches, asparagus, Jean de Luz preserves, leeks, shellfish, bò bún, fresh sheep's milk cheese... Psychedelicious!

Recommended serving temperatures:
- White and rosé wines: between 7 and 10°C
- Light red wines, orange wines (skin-contact whites), and "blouges" (light red-white blends): around 13°C
- Structured red wines: between 15 and 18°C
It is always better to serve a wine slightly too cool than too warm.
BIB (bag-in-box) wines are very good if you serve them directly from the tap. But "to your surprise," you will find that they always benefit from being decanted or bottled 15 to 30 minutes before tasting.
Before and after opening, it is ideal to store your BIB wine at a constant temperature below 20°C. The closer the storage temperature is to 14°C, the longer the wine will keep.
Once opened, under good storage conditions, the BIB preserves the organoleptic qualities of the wine for at least 4 weeks.
BIB wine, like bottled wine, has no "use by" date or "best before" date.
That said, BIB wine is not intended for cellar aging. We recommend consuming it within 2 months of purchase.
Note: Red and orange wines keep better and longer than white and rosé wines. Thank the tannins for that!
