Or more accurately, it's more than a wine.\u003cbr\u003e\u003cbr\u003eIt is a very light organic red wine (10.5% ABV), made from an ancient Loire grape variety (Plantet), organic since 1984, planted on gabbro, hand-harvested, with very little extraction and aged on fine lees in an underground vat, into which Maxime the Enchanter infuses forbidden candy, a very high-quality hemp grown by Hemp of Champ, cannabis artisans tucked away in the Southern Alps.\u003cbr\u003e\u003cbr\u003eAs with the white, the pairing works wonders. The nose is clearly \"Californian,\" but restrained, refined, and seamless. On the palate, there are aromas of fir bud, lavender, violet, blackcurrant, eucalyptus, and weed... It is complex but very balanced, very fluid, and infinitely fine.\u003cbr\u003e\u003cbr\u003eAn Unidentified Vinous Object, already spotted by several chefs (including Alain Ducasse and Eric Guerin) who use it for food and wine pairings in their tasting menus.
